Based off this recipe. I used about 4 sweet potatoes, 4 eggs, and red onion instead of spring onions. I decided to make the pepper sauce more of a salsa, and threw some tomatoes and raw peppers in there. Oh, and some fresh chilli, which was a huge mistake as I rubbed my nose while making it and had a very spicy nostril for the rest of the day.
Peel and slice the sweet potatoes, stick them in a pan with some oil. Put roasted peppers, raw peppers, tomatoes etc into a food processor and blend.
Beat the eggs. When the sweet potatoes are tender, turn on the grill, and pour the eggs into the pan. When they are nearly set, transfer the pan to the grill for a minute or two.
I’m not particularly good at making food that looks as good as it tastes… Trust me, it’s really nice!
