‘Buy this car to drive to work, drive to work to pay for this car’

I was going to post a picture of my to-do list with everything ticked off it… until I realised I had a lot more still to do.

Here is my new & improved to-do list. Also known as the reason why I’ll be having no weekend of which to speak. My belongings are once again threatening to take over the entire house, like some sort of jungle of clothes and books. I’ll also be slaving away at work in the hottest kitchen on earth.

By the way, yes I am that much of an idiot that I filled in my name as ‘Mrs Emily Blackburn’ for my travel insurance policy. I may have been drunk when I did this.

Speaking of kitchens, I made the most amazing butternut squash and sweet potato soup yesterday.

It was so easy to make as well. Here’s how, if you’re so inclined.

Chop a medium butternut squash, two medium sweet potatoes (I used the Bushbok variety, hence why they are white rather than orange, and they tasted no different), a medium onion, garlic, ginger, and chilli if you’re feeling brave. I had a stroke of genius and chopped some coriander stalks too.

Heat some oil in a pan and fry the onion, garlic, ginger, chilli and coriander stalks until it has all softened and starts smelling amazing. Then add the butternut squash and sweet potato and fry them until they’ve softened a bit. Now fill the pan with boiling water/stock (I used chicken stock, vegetable stock might have been a better idea, water will probably be fine) and leave everything to boil for about 10 minutes/until everything is soft enough to be blended. Here I had another stroke of genius and added a sachet of creamed coconut. It’s kind of solid in the sachet so you have to put it in and then stir it around until it melts. I’m not a huge fan of coconut but it works well.

Take it off the heat, blend it, and add some curry powder, turmeric, garam masala, and/or any other spices you like. Serve with some coriander on top. Enjoy!

I seem to be channeling someone’s grandma today. The weather is awful so I wanted to be wrapped up well. I’m wearing a cardigan and scarf from a charity shop (which may well have once belonged to somebody’s grandma), a black jersey maxi skirt from M&Co, grey woolen socks from Primark and pink slippers ballet flats from Tesco. Attractive. Apologies for the worst photos in the world.
